Steamed Fish with Bean Paste  

A culinary classic of fish that melts in your mouth and with just the right amount of seasoning. Gratify your senses by tucking into this fragrant and delicious dish.

  • 1 red fish, 600g
  • 50g minced garlic
  • 40g minced ginger
  • 100g chopped spring onion
  • 2 tbsp preserved rice wine
  • ½ bowl water
  • 3 tbsp KCT Sichuan Hot Bean Paste
  • ½ tsp KCT White Vinegar
  • 1 tbsp Chinese wine
  • 3 tsp sugar
  • After cleaning the fish, place it onto a plate together with 1g chopped spring onion and sliced ginger each, some Chinese wine and salt. Steam till just cooked and set aside.
  • Heat oil in a wok, fry garlic and ginger till fragrant. Add Hot Bean Paste then pour in half bowl of water and seasoning. When mixture boils, add in preserved rice wine.
  • Thicken with corn flour, add in chopped spring onions and some sesame oil. Pour gravy over the fish and ready to serve.
