KCT Stewed Delicacy  

A house recipe of Kwong Cheong Thye, this savory combination of tender stewed meat and aromatic gravy is simply divine.

  • 6 chicken wings
  • 6 duck wings
  • 3 pig's trotters

  • 1 tbsp KCT soya sauce
  • 1/3 tbsp KCT dark sauce
  • 300g crystal sugarrock
  • Oyster sauce
  • 1 tbsp Chinese wine
  • 3 bowl water,place in a pot
  Stew Spices
  • (put in a tightly-wrapped bag and place in a pot)
  • 20g star anise
  • 20g cinnamon bark
  • ½ pc mandarin peel
  • 20g licorice
  • 3 pcs tsaoko
  • 100g mature ginger
  • 4g anise pepper4g anise pepper
  • 5 cloves
  • After cleaning all the ingredients, place them together in a pot and simmer till cooked.
  • Prepare the gravy: boil pig skin, chicken feet and a mature chicken in a pot till well-cooked, season for desired taste. When gravy is ready, you can use it to stew other ingredients. When not in use, sieve the gravy and keep in a cool place. Boil the gravy once every two days. The longer you keep the gravy, the tastier it is.
